Christmas Breakfast Question

I really want to make breakfast this Christmas something different than the usual plain pancakes, wafles, eggs, etc. I want it to be something that I can prepare moslty ahead of time and is a good, hearty and healthy meal. There will be plenty of junk later in the day. Maybe something that I can trhow in the oven while we start opening gifts? I have a 2 year old and he is revenous when he awakens, but surely will not stand to be fed breakfast before we open gifts - he is really excited about Christmas morning. My mom is also staying the night so she can be with us. I dont want to have to go into the kitchen to prepare breakfast during the BIG event! Does anyone have suggestions for me?

THANKS for all the great ideas. I will update you all on what we had and I am SURE we will love it. ITs still a toss up between sweet or savory - will decide tonight and get on with the prep. MANY thanks!

We make breakfast-style pigs in a blanket. Take crescent dough and wrap them around pre-cooked breakfast sausage. Pop in the oven according to the crescent dough directions. You could do the prep work the night before, then cook them up in the morning.

We do pigs in a blanket every Chrismas morning served up on the coffee table on a Santa plate - little smokies wrapped in small biscuits. And we have bananas and tangerines to go with.

i make a biscuit casserole i guess. i made it up a long time ago.

I cook bacon and eggs than after its done it take that shredded cheese and put it in the oven following the directions on the can. it is so easy to make simple and something different.

Plus my 1 yr old is very picky and she wont eat all the other fancy breakfast things.

French Toast Casserole:

Ingredients:
Challah, or other firm white bread
1/3 cup pecans or walnuts
1/2 cup packed brown sugar
1 teaspoon cinnamon or to taste
8 large eggs
1 3/4 cup of milk
2 teaspoons vanilla extract
Maple syrup

1. Using a piece of wax paper, generously grease a 9 x 13 inch glass baking dish with softened butter
2. Slice the challah into 12 1 inch thick slices, then into 1 inch cubes
3. Chop the nuts using a knife or food chopper
4. In a small bowl, combine the brown sugar, cinnamon, and chopped nuts
5. Arrange half the bread in a single layer in the prepared dish, then sprinkle half the sugar mixture evenly over the top. Add a second layer with the remaining bread and sugar mixture.
6. In a large bowl, whisk together the eggs. Add the milk and vanilla extract, whisking until blended.
7. Starting from the sides of the dish and working toward the center, pour the egg mixture evenly over the bread. With a spatula, gently press down on the bread to coat it with the egg mixture. Cover the dish with aluminum foil and refrigerate overnight, or at least 4 hours.
8. Heat the oven to 350 degrees. Bake the casserole covered for 20 minutes, then remove the foil and continue baking until the casserole turns a light golden brown and looks slightly puffed, about 30 minutes more. Serve warm with maple syrup.

I have never written down my recipe.. but this is the closest. I add, chopped Jalapenos and onions to the sausage and then follow these directions.

DAY AHEAD BREAKFAST CASSEROLE
6 eggs
1 tsp. salt
2 c. milk
1 tsp. dry mustard
1 lb. ground sausage
1 c. grated cheddar cheese
6 slices bread, broken small

Spray 8 x 12 inch pan with nonstick spray. Brown sausage and drain. Mix eggs, milk and mustard in blender. Add sausage, bread and cheese. Pour in pan and refrigerate overnight. Bake in morning at 350 degrees. Makes 6 to 8 servings.

I have the PERFECT thing! Creme Brulee French Toast! You prepare it the night before and toss it in the oven in the morning. DELICIOUS!

1) Locs and bagles or with cream cheese, of which there are many flavors.
No cooking!

2) Biscuits. Homemade or the Pillsbury kind. Easy.
With jelly or Nutella.

3) OR, Croissants... with whatever you want to put inside. Which includes:
Locs/smoked salmon
Cream cheese
Cheese
bacon
eggs however you want it
jelly
peanut butter
Nutella
Easy and NO cooking!
Just get croissants from the bakery.

4) Bacon. The Microwave bacon is REAL good and it gets crispy. Easy. And a lot faster than doing it on the stove top.

5) Give your Toddler a cup of milk when he wakes. It will help his low blood sugar. That is why kids are ravenous upon waking. They have not had anything in their tummy, from the night before.

6) AND, have CUT-up fruits... which you have made and prepped the night before.
The fruit, is light and will be a way to keep the others from getting to ravenous upon waking and hold them off, until Brunch. While you quickly prep.

We have made this crock pot breakfast in the past. You put it all in the pot before you go to bed and let it cook while you sleep. When you wake up breakfast is ready! And it's sooo yummy and easy!

Fry up some bacon (recipe says 6-8 strips, so make a whole package! :))
Cook some sausage and crumble it.
Saute some onions and green peppers with some garlic.

Spray crock pot with non stick spray. Put 1/3 of a bag of shredded potatoes in the crock pot. Add 1/3 of the bacon and sausage, and 1/3 of the onions/peppers and about a half a cup of shredded cheese. Repeat and repeat.

Mix a dozen eggs, a cup of milk, some seasoning salt, pepper, or other spices that sound good. Poor mixture over your top layer. Cook on low overnight for 8-10 hours. ENJOY!

Second on the Creme brulee french toast - I made it last year. Also we do bagels and lox. We did cranberry yogurt parfaits for Thanksgiving. I think you could do them ahead of time. My son loved them so much we have made cranberry sauce again just for these.

I know there are several crock pot breakfast dishes. I have made crock pot french toast (the night before), and it's ready in the morning. You can also make oatmeal in the crock pot, too...

I always make Caramel rolls--they arent healthy though. I can make them the night before. I do have a wonderful egg bake recipe though if you are interested message me.
Both recipes are made the night before (maybe a little more prep in the am for the caramel rolls) and put in the fridge, then just pop in the oven.

My silly kiddos have requested "green eggs and ham" sooo I bought some chopped up ham and will be making green scrambled eggs with ham.

My mom always made us Croissants (pre made) with sliced ham and melted swiss cheese. SUPER easy and YUM!

Cinammon rolls are always easy too

My favorite plan ahead breakfast meal is oven baked french toast. It is a messy thing to do if you are not paying attention to what it is. It is a liquid you pour over sliced thick bread and then refrigerate overnight. It is baked in the oven for a while and the liquid is evaporated by the heat of the oven, it cannot be cooked any other way. It is so very very good.

I love to fix it beforehand and then pop it in the oven. When it is time for it to come out I just make sure all the liquid is absorbed and it is done after baking. Different ovens bake differently. I have fixed it in different houses and it turned out differently in each one.

I like a good quiche for breakfast and you can always make that the night before and reheat in the am or just mix it all up and then bake as gifts are being opened. There are tons online but really the best ingredients are cubed ham, cubed swiss or sharp cheddar with chopped spinach or broccoli with boiled cubed potatoes ... I would look up reciepes online.

My family loves hashbrown casserole and coffee cake. But the breakfast casseroles listed sound really yummy too. The creme brûlée French toast sounds outrageous! Right up my ally. None of these are very healthy so you could serve them with fresh berries or other fruit. That's what I do.

Allrecipes has a ton of casserole type of recipes that sound yummy for Christmas morning. Maybe have some fruit cut up for your little one to tide him over.

What about a breakfast frittata? You could make it the night before and then reheat. You could even do a simple one, Spanish tortilla-style with just eggs and potatoes.

Susan's bagels or croissants and lox sound great too. Everything that she suggested could be prepped the night before on a tray (except the lox and cream cheese) and ready to go.

We have something I found a long time ago in the Williams - Sonoma catalogue called summer vegetable fritatta. You can make it ahead and reheat. There are tons of strata recipes out there, but my family has wheat allergies, so we don't do a ton of bready things. Enjoy!

I have a simple recipe that I like to make. I saute some red peppers and onions, fry up some bacon (we use turkey, but obviously whatever you like will work) or some maple sausage, scramble some eggs, then mix it all together in one dish. If your 2yo won't eat the peppers and onions, you can pull some of the eggs/bacon out before you add the peppers/onions. You can make some cranberry bread ahead of time and serve it with the eggs. Yummy, healthy, filling. Easy.

I make this egg casserole every year - prepped the night before, goes in the refrig. the night before, get up, turn on the oven and bake while you open presents.

HAM AND CHEESE STRATA

8 slices of bread, cubed
4 ounces processed cheese, cubed
1 cup ham, cubed
6 eggs
2 cups milk
1/2 tsp. dry mustard
1/2 tsp. salt
1 tsp. onion flakes
4 ounces cheddar cheese, shredded
paprika

Lightly grease the deep dish baker and put in half of the bread cubes. Place processed cheese cubes and ham over bread. Add remaining bread. Beat eggs, milk, seasonings and onion flakes to combine. Pour mixture over bread, ham and cheese. Sprinkle shredded cheddar cheese on top. Sprinkle with paprika if desired. Refrigerate overnight. Bake at 375 for 45 minutes, or until set. Cut into wedges.
Yield 6-8 servings.
The deep dish baker is a retired Pampered Chef stone - but you could use a 9 x 9" cake pan - but make sure you grease the pan

For Christmas Eve, we make waffles, but I get berries, nuts, powdered sugar etc for the topping that we don't usually do - we have more time on Christmas Eve morning to prepare all this. I also have 4 Christmas themed plates we use to make it more special too. We tried fried eggs, bacon etc but felt so yuck after eating it wasn't worth it.

Also try Monkey Bread. You prepare it the night before and then bake it in the morning (we do this Christmas day because it's quicker). So Yummmy! Send me a PM if it sounds good and you want the recipe.

Look up recipes for "egg and sausage breakfast casserole". It isn't the healthiest thing since it has cheese and sausage, but it's probably better than waffles and syrup. It's yummy, you make it the day before and then put it in the oven in the morning. Yum!
