I need a yummy cake recipe. My nanny has Celiac and it's her birthday this Sunday. My always thoughtful daughter wants to make her a cake, so I need your help!

Betty Crocker has a GF cake mix that's really good (and the cheapest for mixes). We are also GF, I would suggest a mix vs trying to make one from scratch.

On the back of my quinoa (sp?) box are some recipes for gluten free cookies- so maybe google quinoa recipes and you can find something. She can have rice flour, right?

I suggest going to allrecipes.com or something similar to see what you can find. You can always substitute rice flour for all-purpose or baking flour, but it is definitely a different texture/consistency, so you almost have to know what you are doing. Another suggestion is to make her an ice cream cake instead. My mom can't eat gluten, and really doesn't like the taste of gluten free cakes, so we often times make her an ice cream cake instead. I have recently started to see boxed cake mixes in the baking aisle that are gluten free. Maybe a larger grocery store in your area will have them?

Check out the recipes on www.livingwithout.com. Also, if you have a Whole Foods near you, there is a GF boxed cake mix by Cherrybrook Farms that is really yummy and easy to make.

I have 2 grandsons with the same issue. I googled and went to the Pamela Gluten Free Products website (Pamelaproducts.com). I've used several of their recipes and my family has loved all of them. I think that's saying a lot when my harshest critics are the 2 grandsons (ages 7 and 2) and they've gobbled it up. You can purchase that product line several places; I usually shop at Central Market and find a pretty good selection.

My daughter and I have been GF for years and we are cake connoiseurs. Pamela's classic vanilla cake mix is easy and absolutely delicious. Add the optional almond flavor to it. Chocolate frosting will overpower the cake flavor. We usually just buy a can of whipped white frosting (double check with your nanny that it's GF)

Betty Crocker now makes Gluten free cake mixes in Devils Food and Yellow cake mixes. It's not from scratch, but it's a thought!
Also, at Sprouts everything Gluten free is 25% through October 27th!

My daughter is allergic to wheat and I've tried many different brands of cake mixes. My absolute favorite is Gluten Free Pantry. You can buy it at Meijer. The Betty Crocker mixes are also very impressive and really don't taste gluten free.

Our favorite is Pamelas chocolate cake with the dark chocolate frosting. For some reason the dark chocolate frosting has been hard to find. They have it at Sprouts, Whole foods and Central Market.

I am celiac and love to bake and I have found the best cake mix to be Namaste. Their chocolate cake and their spice cake are divine! I have made an "oreo cookie" cake with the chocolate namaste cake and then I buy K-Toos gluten free oreo cookies, crush them up and mix them in icing. I make my own icing with Pamela's vanilla mix (I can't do corn syrup) but you can also buy Duncan Hines as their icing is gluten free.

Make it easy on yourself - go to grocery store and get a Betty Crocker box mix of cake that is gluten-free. Our Tom Thumb started stocking these (and cookie mixes) this year. All canned frostings are gluten-free already. You can also try Sprouts and Whole Foods.

They just did a reset of my local Walmart neighborhood market and they added a large section of gluten free foods. Haven't checked out all the brands yet, but they had several cake mixes.

I also have Celiac and I found Betty Crocker ( General Mills) has a great chocolate cake box mix. I made it the other day and it did not last long. Also, King Arthur makes great box mixes.Red Bob Mills makes cake mixes too but I was not that impressed. I usually make Hershey's brownies recipe(you can find it on their website) with Red Bob Mill's gluten free flour when I want a cake. It only takes 1/2 cup of flour so it does not have the gluten free taste and I love brownies. There are a lot of flourless chocolate cake recipes but I have not tried any of them. I have also made cheesecake and used gluten free cookies to make the crust. Baking gluten free is usually a mixture of gluten free flours and xanthum gum so it may be easier and cheaper to use a box mix.
