Low Sodium Marinades for Meat

Hi everyone,
My husband and I are looking for low/no sodium alternatives to some of the marinades on the market. We eat well with lots of fruits and veggies... we always buy low/no sodium soups and beans but have had a really hard time finding marinades that contain low sodium. I'm about to resort to making them myself... so if you have any good spice ideas, please let me know that, too. I do use a fair amount of Mrs. Dash but it's hard to use that with 2 lbs of meat... We eat chicken, beef and fish. Thanks!

So What Happened?

Thank you everyone for your great suggestions. I will try all of them! Also, it's obvious that I'm pregnant because one of the posts included info about a shop in Scottsdale called Penzey's... well, a girlfriend gave me a bag of 4 spices/marinades from the store and their magazine back in March... it's all sitting in my cabinet because I totally forgot about them. I appreciate all of your suggestions.

I would recommend Penzey's: http://www.penzeys.com/cgi-bin/penzeys/shophome.html

They have a wide variety of spices, many of which are low or no sodium. They have one store in Scottsdale, but otherwise you can order anything in the store online. They also have some great recipes incorporating their spices.

I like to use yogurt- usually vanilla. Sometimes I add things like oregano, garlic, cumin, whatever I'm in the mood for. It may sound weird, but it's really goo. The best part about it is that it is a quick marinade, so it only takes a minute or so (you can let it sit longer if you like) and the meat turns out very moist. We mostly eat chicken around here, so I haven't tried it with other meats. Good luck!

Hi J.,
Our favorite marinade contains juices from 2 lemons, 2 limes, one orange and if you want, white pepper, cilantro, onion and garlic...Its a Mayan recipe and amazingly good with no salt.

Hi J.,
I use a lot of Chili powder on everything! Salmon, Fish, Chicken,. After a few dashes on the meat then as you cook it grilled, baked, etc. I add a little bit of water of wine. It makes it's own sauce and your food is so good. Not spicy just has great flavor. Plus you can do that with other spices that do not have salt. Try you might like it!

We've never bought a store bought marinade. My husband usually does the marinading. He usually pours a little olive oil on the meat first and then sprinkles on pepper, cumin. paprika or whatever other spices you like, and rubs it in. Then if it's fish he squeezes some type of citrus fruit over it (lemon, oranges, etc)and lets it sit in the refrigerator. If it's chicken or beef, he'll sometimes still use the citrus and sometimes pour in some beer to help tenderize it. It always comes out wonderful. You can add some sprigs of rosemary too. Be creative !

Papaya and pineapple contain papain, which is a natural meat tenderizer. I like to puree papaya in the blender with the seeds (pleasantly spicy) and put the resulting sauce and the meat I want to cook in a freezer bag to marinate. I usually do this with pork, but it works well with chicken, too.

Ripe mango with some lemon juice, brown sugar and ginger is also really good.
