Need a Healthy Cake Recipe

Hi ladies! My daughter is about to turn one and I am looking for a healthy cake recipe to make for her first birthday. I am not anti-sugar, but I do try to limit her sugar intake. I guess you could say I am middle of the road. Anyway, I am looking for a somewhat healthy (but good!) cake recipe that doesn't require me to buy a ton of total obscure ingredients that I will never use again. Thank you!

So What Happened?

Thank you for all the great cake recipes! I made a jello-poke cake (with applesauce rather then oil) for the adults and the cake recipe in What To Expect for my daughter. It was great, but I couldn't convince her to get super messy for a nice photo. =) I look forward to making the other recipes for our other special occasions!

Here is a link to the "diet soda" cakes. I have tried this with chocolate cake mix and diet coke, leaving out the eggs, and it is very good. My son is allergic to eggs so we always substitute. My aunt made it with a low sugar cake mix, I believe it was a spice cake, and then added diet dr pepper. It was moist and delicious and you couldn't tell it was low on sugar.

Hey A.,
I would just use regular cake mix but frost it with real whipped cream instead. I would be careful about sugar-free or low sugar mixes because they are made with Splenda and it is really bad for small children(acually anyone). Good Luck! Have fun!

Here's one that's our favorite, do to calorie/sugar count, simplicity, and most of all - taste!

1 box cake mix, any flavor
1 box sugar-free instant pudding mix (4-serving size), any flavor
2 cups skim milk.

Preheat oven to 350. Spray 9x13 pan with Pam. Combine dry cake mix with dry pudding mix and milk in large bowl and stir well with whisk to mix. Pour into pan; bake 30 minutes at 350. Top with your choice, but we usually use Cool Whip Free, which can be flavored.

That's it! No eggs, no oil, no fat, and minimal sugar, but plenty of flavor. Enjoy!

Hello!
For my son's birthday, I used a carrot bread recipe that was less crumbly so it was good for him to eat with his hands. I also used a cream cheese frosting, which all the adults liked, too! I doubled the recipe and baked it in two nine-inch round pans.

APPLE CARROT BREAD

1 1/2 c. finely cut apple
1/2 c. grated carrot
1/4 c. butter
2 eggs
2 tsp. cinnamon
2 tsp. lemon extract
1 3/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
2/3 c. sugar
1/2 c. chopped nuts

Blend sugar, eggs, butter. Add rest of ingredients. Mix well. Bake in well- greased and floured bread pan at 350 degrees for 40-50 minutes or until done.

When my son turned 1 in November I also wanted to make a healthy cake and I found the following recipe on allrecipes.com. It had great reviews and I agree with them. This cake is so moist and delicious. I used ready made cream cheese frosting instead of making the frosting because I was short on time, and I also left out the pecans.

CARROT CAKE III

INGREDIENTS
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans

1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

this is very good and very easy to make

3 milk cake
6 egg whites
6 egg yolks
1 tsp vanilla
1/2 cup sugar
1 cup flour
Beat 6 egg whites together with vanilla and 1/4 cup sugar till stiff peaks. Mix 6 egg yolks and remaning sugar till pale yellow.Alternate Flour and yolk mixture in egg white mixture. Bake 20 min. or until tooth pick comes out clean.
poke holes on top of cake with a fork/knife then por milk mixture on top. frost with thawed whip topping(can add color beat with mixer, dont over beat.

milk mixture
1 can evaporated milk
1 can sweetened condesend milk
1 can of milk,any kind that you drink.
mix well.

This is the easiest and most delicious and healthy recipe I know...1 box of angelfood cake mix and 1 can of crushed pineapple..mix them together and bake at 350 till it's golden brown on top and set in the center..I frost it with cool whip free but I'm sure you could use whatever you wanted.

This recipe is very good...even my teenage stepson asks for it for his birthday and because it doesnt have the typical sugary frosting it is less fattening...plus the jello adds protein (meat substitute). You can even flavor the cool whip topping with kool-aid or more jello :) Enjoy!

JELLO - POKE CAKE

1 white cake mix
1 sm. (4 oz.) Jello mix, any flavor
8 oz. Cool Whip
1 c. boiling water
1/2 c. cool water

Make cake according to package directions. Cool cake 20 minutes. Using utility fork poke cake at 1/2 inch intervals. Make Jello using 1 cup boiling water and 1/2 cup cold water. Pour Jello slowly over cake covering all holes. Chill 3 - 4 hours. Spread with Cool Whip.

Ever tried Jello cake? All you need is a white cake mix, a box of jello (I love black cherry), and some whippped topping. Bake the cake according to the package (I've heard of substituting applesauce for oil and 2 egg whites for 1 whole egg, but never tried it). Use the end of a wooden spoon or spatula to poke holes in the cake about ever 1.5-2 inches. Prepare jello according to the package then pour over the cake. Pop it in the fridge and after its chilled spread on cool whip (get the generic lite. We made this for my son's first birthday and he loved it.

I read a book from the Library..sorry don't know the name, anyway it was about birthday parties for kids, sample menus, etc with healthy food. The author said, make great healthy snacks for the party...but for goodness sake, let them eat cake! It's once a year...don't worry so much about the cake calories, etc.

Good morning, A.! For our daughter's first birthday, I made cupcakes and diplayed them on a cupcake tree. Very cute and less mess. I've seen reduced sugar cake mixes on the shelves lately.

This is such a good idea. Im going to do it for my new baby. When my daughter turned one she actually started shaking from all of the sugar on her cake, she wasnt used to things like that. I hated it! Sorry no recipe but thanks for the post because Im going to steal some recipes!

here are two cakes I make ~ didn't have time to read all the posts, so if this is a duplicate, I apologize ~

Regular cake mix (any flavor) ~ Substitute Applesauce for the oil, and follow the rest of instructions.

OR

Regular cake mix, one can diet soda (any kind), one egg. Follow the rest of instructions (I haven't made this one in awhile, so can't remember if it baked the entire time or not so just be sure to check it)

I frost with lite cool whip or no frosting.

DO NOT PUT DIET SODA in a cake (or anything else you COOK!) unless you are SURE it contains ONLY SPLENDA as the sweetner. Nutrasweet and Equal contain aspertaime, which turns into formaldehyde when heated. In general, artificial sweetners are BAD.

For my son's first birthday, I made the cakes in the book "What To Expect the First Year." They have two recipes, and I made them both (they use apple juice concentrate as the sweetner and no sugar). I used golden raisins and whole wheat flour to make them a little better for you. They freeze well and make a great snack for up to a couple months later also.

Hey!! I dont know the extact recipe but I do know that if u use a box cake mix instead of the oil just add applesauce instead...I did it with a choc cake once and I think it tasted like brownies it was good but I would just much rather have the reg cake!!! Good luck!!!

Try substituting Splenda for the sugar in a regular cake recipe. I'm diabetic and have tried it with great results. Good luck and God Bless.
