Super Simple Crock Pot Recipes?

Hi moms - looking for REALLY EASY home cooking ideas. I have a 6-8 week contract job starting monday and want to make dinners so we're not eating tons of "easy" processed foods. Do you have any "dump and ignore" crock pot recipes? I want to avoid the ones where you have to do a lot of prep. My hubby's going vegetarian, so some of those ideas would be good, but if there's a recipe of a good mix where I can just take out the meat and the veggie part will still be a meal, that would be awesome too!

I love Allrecipes.com. You can get a ton of good recipes on there. You can narrow it down by vegetarian slow cooker meals too.

Lasagna! It really does come out good! Use the oven bake lasagna noodles and just layer in whatever you want. Start with sauce on the bottom and I spray the pot with cooking spray first. Cook on low about six hours.You can use veges or pre-browned meat in this one.

roast, is a great one. i put potatos (if you dont want to cut them you can get the tiny ones you can just throw in whole), carrots, fresh green beans (they take longer to cook & wont get soggy), mushrooms & onions then put the roast on top of it, fill with water & season to taste

chicken is good because you can put in whatever kind you have, whole or breast with or without skin, add in rice & whatever veggies you like (make sure you do 2:1 water:rice)

you can do raviolis with sauce (i put them on warm if they are going to be in more than 2 hours because they really dont take long at all!!)

you can also do meatballs with sauce & then just cook your pasta

i do pork chops with a can of cream of mushroom

I LOVE my crockpot and would recommend besides the couple of recipes I'll give Allrecipes.com and also if you're on Facebook there's a crockpot recipes community on there too. :)

Chicken Tacos

4-6 boneless skinless chicken breasts
1 1/2 envelopes of taco seasoning mix
1 cup of water
Mix the taco seasoning and water together in the crockpot, toss in chicken and cook on high for 6 hrs or low for 8 hours

Crockpot Roast Beef with Veggies

1 eye of round roast or bottom roast
1 envelope of onion soup mix
1 clove of garlic sliced in three
chopped up carrots
one whole onion sliced
3-4 potatoes cut in chunks
salt and pepper
1 cup of water

Mix water and HALF of the onion soup mix in the crockpot. Put roast in. make three slits in the top of the roast and insert garlic slices in each. Pour rest of onion soup mix over the roast. Season with salt and pepper. Toss in carrots, onions and potatoes and cook on high for 6 hrs or low for 8 hours.

Crockpot Lasagna - veggie style

1 box of no cook optional lasagna noodles
1 container of ricotta cheese
1 pkg of mozzarella
1 egg
1 cup of parmesan or pecorino romano cheese
1/2 pkg of frozen spinach
1/2 cup of shredded carrots
1/2 sliced onion
1 garlic clove minced or 2 tspns of minced garlic
1 tablespoon of parsley flakes
1/2 tspn salt
1/2 tspn of pepper
1 jar of sauce or your home made sauce

On the bottom of your crockpot, spray with cooking spray lightly and pour a little bit of sauce on the bottom of the crockpot as well. In a bowl, mix the ricotta cheese, the grated cheese, 1/2 pkg of the mozzarella cheese, salt, pepper, garlic, spinach, onion and carrots and parsley and egg all together for your filling. Place a layer of noodles on the bottom of the crockpot and then a layer of the filling. Place a little sauce on that layer and repeat. Pour some sauce over the top of the lasagna and sprinkle with some grated cheese and cook on low for 8 hours. (You can try alfredo sauce but I've never tried it before but I'm sure it will be yummy).

If your crock pot doesn't have a timer get a timer that works to turn off lights and lamps when you are gone and plug your crock pot into it. If you place a hand towel on top of the lid you can set you crock pot one setting lower. Don't let it drape over the sides.

Simple recipes?
Open cans of chili beans, pour them in your crock pot, turn it on. Add diced onion and chili peppers when you get home. If you don't like the "hot" in peppers, cut out the seed and white part. That's where most of the heat is. If you want meat, add hambuger or beef stew meat or chicken leg 1/4's when you add the chili beans. Chicken leg 1/4s work better in chili than chicken breasts.
Non-beef stew. Cut potatoes into chunks, add cut carrots, diced onion, sliced fresh mushrooms, gravey mix, a can or two of cream of mushroom soup. One table spoon of flour mixed with water. Add beef chunks or pork chunks or chicken leg 1/4s or cut up chicken breasts if you want meat. Take the chicken leg 1/4s out when you get home and let them cool on a plate. When you get ready to set the table, debone the chicken leg 1/4s and put them back into the stew and stir. The chicken meat will come apart and you'll have chicken distributed throughout the stew.

Cut potatoes into chunks, sliced mushrooms, diced onions, add whole kernel corn with the juice in the can. Add one or two cans of cream of mushroom soup. I like it best with chicken broth instead of water. If you like it spicy, add a 16 ounce can or two or three of nacho cheese sauce and a can of rotel.

I use my crock pot for beans a lot. One pot of beans can make two dinners and one lunch at my house (my husband is mexican.) Night before: sort and rinse a few cups of dry pinto beans (take out the rocks and bad looking ones.) Rinse. Put in the crock pot, cover with water, soak over night. Rinse in the morning, cover with new water, cook all day on low. I add salt, garlic and a tablespoon of bacon drippings, but you could do it without the meat if your husband is that strict, I would probably put in more garlic. Serve this over rice and sprinkle cheese, chopped green chillis, green onions, chopped tomatos, salsa, hot sauce, what ever combo you like, on top. Cheap, easy, filling, complete protein source. I usually make buritos with a salad and fruit for another day, and either buritos or bean and cheese nachos for lunch one day later in the week with the leftovers. Beans freeze well too!

I used this recipe when I was building my hubby's confidence in the kitchen. One can of condensed mushroom soup (size based on amount sauce desired), stew meat/any type of thin cut beef, sliced mushrooms, and cubed potatoes. Add and omit veggies as desired/on hand. Toss it all in the crock pot and turn it on low or high depending on how long you'll be gone (low for all day, high for a few hours). Typically he omits the potatoes and serves it over rice. In general any condensed soup with any meat can be a good crock pot conconction. Although for us the soups can be a touch salty so be warned.

Stir-Fry

1 lb cooked ground beef
2 28 oz cans of Kroger stir fry veggies
2 packs brown gravy mix
and about 1/4 to 1/2 soy sauce

throw it in crock pot and warm I serve over white rice

Texas Stew (for colder days)

1 can hominy drained
1 can whole kernel corn drained
1 can sliced carrots drained
1 can sliced potatoes drained
1 can ranch-style or chili beans
1 can diced tomatoes
1 cup water
1 1/2 lbs ground beef cooked
little onion powder, little garlic powder, dash of hot pepper, dash of worcestershire sauce, and chili powder to taste

Mix it all together 4 hours on high or leave all day low.

(with both of them you can cook the meat the night before)
